Sti-fry with aubergine and courgette

Ingredients (4 servings):
•    1 courgette
•    1 small aubergine
•    3 tablespoons grape seed oil
•    2 cloves of garlic
•    2 cm of ginger root
•    1 small chilli pepper
•    A few sprigs of basil and coriander each
Sauce
•    3 tablespoons of soy sauce
•    3 teaspoons of sugar
•    3 tablespoons of lemon juice
•    1 teaspoon of potato flour
•    100 ml of water
Sti-fry with aubergine and courgette

Cut the courgette into thick slices. Cut the aubergine into slices which you then divide into 4 pieces.
Finely chop the garlic and ginger, slice the pepper.
Heat the oil in a large wok or frying pan, throw in the garlic, ginger and chilli. Fry for a couple of seconds, add the courgettes and aubergine. Fry, stirring frequently, until the vegetables soften but still remain crunchy.
Mix the sauce ingredients together and then pour it over the vegetables in the pan. Add the chopped basil and coriander leaves. Heat until the sauce has reduced.
Serve with rice or Chinese noodles.
