Pea paste
Ingredients:
- A cup of peas
- A clove of garlic
- One tablespoon of olive oil
- A tablespoon of grated parmesan, pepper, a pinch of chilli
Boil the peas until tender (about 5-8 minutes), drain them in a sieve and rinse with ice-cold water so that they retain their appetising green colour. Transfer them to a dish with the garlic, oil, parmesan, pepper and a pinch of chilli. Blend it all to a smooth paste.
