Creamy onion soup
Ingredients:
- 1 kg of onions
- 1 large potato
- 1 carrot
- 3 cloves of garlic
- 3 tablespoons of olive oil
- 4 tablespoons of chopped chives
- 4 cups of vegetable broth
- A pinch of pepper, salt, nutmeg, thyme
Peel the onion and cut it into rings, chop the carrot and potato into small cubes. Heat the oil in a pot, add the onion. Glaze the onion, then add the carrots, potato, garlic, spices, pour in the vegetable stock. Cook for approx. 30 minutes. Blend it all to a smooth paste. Serve with chopped chives and croutons or mini pastry balls.
