Breakfast egg muffins with bell peppers, mushrooms, green peas and yellow cheese

Ingredients (6 servings):

  • eggs - 4
  • milk - 4 tablespoons 
  • salt and pepper
  • red bell pepper - 1/2
  • mushrooms - 100 g 
  • peas (fresh or frozen) - 50 g
  • hard cheese - 30 g
  • oil to grease the moulds

Cut the mushrooms into strips. Heat a tablespoon of oil in a frying pan and fry the mushrooms in it for about 10 minutes until they are reduced in size. Dice the bell pepper. Grate the hard cheese.

Grease the muffin tins with oil. Place the mushrooms, peppers and green peas in each.

In a bowl, whisk the eggs with the milk, salt and pepper. Add grated hard cheese. Pour the mixture into muffin tins.

Place the tins in an oven preheated to 200 degrees Celsius and bake for 20 minutes.
