Groats with turkey, green beans and mushrooms

Ingredients (4 servings):

  • 1 onion
  • 1 cup buckwheat groats
  • 400 g green beans (fresh or frozen)
  • 250 g mushrooms
  • 2 cups vegetable or chicken bouillon
  • 250 g minced turkey meat
  • salt and pepper as required
  • 2 tablespoons of vegetable oil
  • 1 teaspoon herbes de Provence
  • parsley or chives to sprinkle on top

Preheat the vegetable oil in a large frying pan. Add diced onion and sliced mushrooms. Fry, stirring occasionally, for about 10 minutes, until the onions have softened and the mushrooms have lost their volume. Add the turkey meat, season with salt, pepper and herbes de Provence and fry, stirring, until the meat changes colour. Add the buckwheat groats and fry for one more minute. Pour in the stock and simmer, covered, for 20 minutes. After 10 minutes, add the green beans. Finally, stir well. Serve sprinkled with parsley or chives.
