Traditional lecsó with sausage

Ingredients (4 servings):

  • onions - 2
  • red bell pepper - 2
  • yellow bell pepper - 1
  • courgette - 1 medium
  • 500 ml of tomato purée
  • sausage - 2-3 smoked sausages - 300 g
  • oregano - 1 teaspoon
  • sweet paprika - 1.5 teaspoon
  • hot paprika - 0.5 teaspoon
  • salt and pepper as required
  • olive oil or other vegetable oil - 3 tablespoons
  • parsley to serve

Dice the onion. Dice or strip the peppers and cut the courgettes into half-slices or cubes. Cut the sausage into slices.

Heat the oil in a thick bottomed pot. Throw in the onion and sausage and fry, stirring occasionally, for 7-8 minutes. Then add the courgettes and peppers and fry for a further 5 minutes. Add the tomato purée, season with oregano, sweet and hot paprika and salt and pepper. Stir, bring to the boil and simmer for about 25 minutes, until all the vegetables are tender. Serve with bread and garnish with parsley.
